This cacao from Mexico is strongly intertwined with the history, identity and culture of the Chiapas. It is believed that the Olmecs used and cultivated cacao in 2000 BC. In this area, the cacao is harvested fresh and transported to the fermentation center at Finca La Rioja. Cocoa paste is made from 100% cocoa beans (Cocoa beans are grown and brought from farms in Mexico)

Cocoa type: Trinitario

The Trinitario species were bred by hybridizing the Criollo and Forastero species in the interglacial, combining the quality of the Criollo with the disease resistance of the Forastero.

What does this mean? Cocoa mass is a pure 100% cocoa bean product obtained by grinding fermented and roasted cocoa beans to a smooth mass. Next, this solid mass is broken into smaller pieces of cocoa mass. Crushed cocoa consists of the same amount of 100% fermented cocoa beans . It is obtained by grinding cocoa mass until fine cocoa flakes are formed.

How to make cocoa from cocoa mass?

In order to make the desired cocoa drink from cocoa mass, you first need to grind the cocoa. For this purpose, you will need a knife and a cutting board. Using a knife, scrape off several layers of cocoa from either side of the piece of cocoa mass (20g per serving). After grinding the desired amount of cocoa, pour the cocoa into 70 ml of hot water and use an electric mixer if possible. If you don't have an electric mixer, you can use a teaspoon to better mix the cocoa in the hot water. You can fill the rest with both warm vegetable milk (oat, almond) and plain water (if you want ceremonial cocoa, add 30g per portion).

Having ground cocoa

If you have ground cocoa, add 70ml of hot water and if possible use an electric whisk to dissolve the cocoa more easily. If you don't have an electric mixer, then you can use a teaspoon to stir the cocoa into the hot water. You can fill the rest with both warm vegetable milk (oat, almond) and plain water (if you want ceremonial cocoa, add 30g per portion).

How to make cocoa (per cup):

  • Grind 15 - 20 g. cocoa mass
  • Boil water and add chopped cocoa mass
  • Stir with a spoon or an electric mixer until the cocoa mass is dissolved
  • If the cocoa drink lacks sweetness, you can add milk or sweetener

Cocoa strength per serving:

10 - 15 g. - weak cocoa drink.
15 - 25 g. - medium strength cocoa drink, tonic.
2 5 - 40 g. - a strong cocoa drink, best suited for cocoa ceremonies.
